Growing in the reserve most of us grew up eating soup most of the time. So much soup in fact that it seems that we kind of got sick of it. But as we get older we each passing year, we move to different places we often go further and further away from those traditional foods we enjoyed as children.

Every now and then we sometimes get a significant craving for those traditional meals we had as kids and we sometimes don’t know how to make them. So let’s go back to the good old days and learn to make some Yummy Mutton Stew.

Mutton is the meat from a sheep over 2 years old and has less tender flesh. In general, the darker the color, the older the animal. Baby lamb meat will be pale pink, while regular lamb is pinkish-red.

Mutton stew (Atoo’) is a popular dish in the southwest among the Diné (Navajo) people. It is a simple dish that packs a lot of flavor from the mutton meat. It is eaten year-round and the ingredients can be changed depending on what you have in your pantry.

Sheep are an important asset in Diné (Navajo) culture and all parts of the sheep are used from cooking to weaving. What else is not used from the sheep is then buried in the ground to return back to mother earth.

It is most commonly made with mutton. If you cannot find mutton in your local grocery store, it can be substituted with lamb or beef.

How To Make It?

First, you’re going to need to dig out the old crockpot from the bottom corner cupboard in your kitchen and make sure to rinse it if you haven’t used it in awhile.

Next, you’re going to want to rinse off your meat in a strainer with cold water to remove and unwanted stuff that maybe is on it. Next, you’re going to dump your meat into the crockpot.

Then you going to want to fill the crockpot half ways with cold water, then put in the vegetable broth until the crockpot is about 3/4 of the way full.

Make sure to plug in and turn on the crockpot. Feel the sides of the crockpot with your hand to see if it is actually on. Nothing worse than putting meat in a crockpot all day to only come home to find that the crockpot was never on, to begin with so make sure it is on.

Leave the meat to cook on high for about 2 hours, this gives you time to get the rest of your ingredients.

So depending upon the number of people you want to feed make sure to get just more than enough ingredients to feed everyone. It’s better to have a little bit more than not enough.

So next you’re going to first peel and cube your potatoes into bite-sized pieces. Then after rinsing them off in cold water in a strainer, you are then going to throw the potatoes into the crockpot.

Next, you’re going to the same things like the carrots. You’re going to peel the carrots or if they already peeled you can move onto the next step. Start cutting the carrots into bite-sized slices, then rinse them in the cold water in a strainer, and then throw them into the crockpot as well.

The reason why you have to throw the potatoes and carrots in first is that they take the longest took out of the rest of the vegetables.

Next, we got our delicious butternut squash, since its biggest vegetable but doesn’t take too long to cook this one should be next. First, you’re going to need to cut the butternut squash in half then take out the seeds with a spoon. Then after you’re done peeling the skin off the squash, you’re going to cube it up into bite-sized pieces. Next, you have to, of course, rinse them off and then throw in the crockpot.

Cleaning as you go, Next, you are going to pull out the cabbage than cutting it in half your going to mince up one half of the cabbage then put away the rest for a rainy day. After you rinse off the minced cabbage with cold water your then going to throw that in the crockpot as well.

Next, we do our good old celery, repeating the process of cutting, rinsing, then putting in the crockpot.

Then next add your can(s) of corn into the crock pot.

Last but not least your going to put the onion into the mix. After peeling the onion you’re going to want to chop and rinse the onion, then throw into the crockpot.

The reason why the onion goes last is because it doesn’t take too long to cook also when cutting the onions they sometimes have the tendency to make your eyes water pretty bad and if you were to cut them in the beginning it would be pretty hard to cut the other vegetables.

Then your going to put your seasonings.

Then after your done adding all ingredient’s wait until off vegetables as soft then add fresh parsley for garnish.

First, you’re going to put in a tablespoon of garlic salt then a 1/2 tablespoon of pepper.

You can add a Jalapeno later if you want more spice in your life.

Ingredients

  • 8-10 cups of water and vegetable broth
  • 4lbs of mutton backbone or 2lbs of Cubed Mutton Stew Meat
  • 5 Large Carrots peeled, diced and chopped
  • 6 big red potatoes
  • 6 Celery Stalks diced
  • 1 Large Onion diced
  • Half a cabbage (minced)
  • 1 can of fresh corn
  • Seasonings: ½ tablespoon Garlic Salt and ½ teaspoon Pepper, 1 teaspoon of parsley
  • Optional: Diced Jalapeno
